Vegetable and Cheese Noodle Pudding



Ingredients

2 1/2 cups mixed vegetables ( green, red, orange and yellow pepper, carrots, onion, and celery)
1/2 cup shredded mozzarella cheese - store brought reduced fat - 2% milk
8 ounces extra wide yolk-free whole grain noodles (buy 12 ounces or 16 ounces bag)
1/2 teaspoon oregano from oregano grinder
1/2 teaspoon basil from basil grinder
1/4 teaspoon Italian seasoning from Italian seasoning grinder
1/4 teaspoon pepper from pepper grinder
olive oil

Directions

Put about 6 cups of water in medium size saucepan, bring to boil, add 8 ounces noodle, cook until firm not soft , then drain them.
Chop each pepper, 1/2 of an onion, 6 carrots and 4 stalks of celery, then put 2 1/2 cups of mixture onto a small bowl
Add cheese and herbs  and mix it
Coated a 9 1/4 x 2 1/2 glass baking dish with olive oil
Cover bottom of dish with noodle
Put vegetable, cheese and herb mixture on top of noodles
Top with rest  of noodles
Put shredded cheese on top, just enough to cover it
Baked at 350 degree about 55 minutes or until cheese is melted and vegetables are firm not soft
Use pasta sauce for extra flavor

Serve 6 - 2 ounces servings or 4 - 4 ounces servings

Cinnamon Apple Slices a la Gelato






Ingredients

4 gala apples
1 tablespoon cinnamon
2 cups of orange juice
4 cups of water
gelato - any flavor

Directions

Add 2 cups of  orange juice and 2 cups of water in a medium bowl.

Core, peel and slice the apples and put them in the bowl with the orange juice and water mixture.

Put apples and orange juice-water mixture in a large saucepan and add 2 more cups of water.

Cook apples until they are soft but firm.

Drain apples.

Add 1/2 cup gelato, 1/2 cup apples in a bowl and sprinkle cinnamon on top.

Rice Noodles Salad with Green Beans, Tomatoes and Red Wine Vinaigrette Dressing






 Salad Ingredients

7 ounces  rice noodles, medium width noodles or stir - fry noodles
1/2 pound fresh green beans, trimmed and cut into 2- inch pieces
2 cups cherry or grapes tomatoes, cut in half
1/2 cup chopped green onions
1/2 cup chopped thinly sliced basil

Dressing Ingredients

3 tablespoons red wine vinegar
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, minced

Directions

1. Bring 4 cups of water to boil in medium saucepan
    Remove from heat and add rice noodles then let it
    stand 8 to 10 minutes or until noddles are soft but 
    firm. Rinse under cold water, drain well, set aside
2. Combine tomatoes, basil and green onions in a
     small bowl
3.  Combine red vine vinegar, olive oil, lemon juice,Dijon 
      mustard, salt, pepper and garlic in a small bowl
4.   Put green beans in a steamer and steam them until
      they are soft but firm while maintain their color
5.   Add noodles to tomatoes, basil and green onions,
      add green beans and mix well
6.    Pour dressing over noodle mixture and toss gently
7.    Cover and chill at least one hour

Serving size: one cup

Vegetable Slaw




Ingredients

One orange pepper
One yellow pepper
One red pepper
One sweet onion
One bundle of celery
One bundle of carrots
Store bought coleslaw made with the white part of the cabbage and carrots. The coleslaw dressing was manufactured by Ask Foods Inc., Naturally Creative.The coleslaw dressing ingredients are soybean oil, cider vinegar,sugar, egg yolk, water, distilled vinegar, dried egg whites,mustard seed, salt, dried egg yolks, lemon concentrate, paprika & natural flavor and contains egg.

Directions



  1. Chopped peppers, half of the onion, four ribs of celery, and three carrots.
  2. Combine these ingredients and put in a storage container.
  3. Plated the coleslaw with a small amount of dressing.
  4. Add vegetables combination.

This vegetable slaw is a good addition to any meal.

Fruit Slaw

  Ingredients

One Honey Crisp Apple
Small bundle of seedless red grapes
Store bought coleslaw made with the white part of the cabbage and carrots.

Directions


  1. Slice grapes in half and put in bowl.
  2. Chopped apples into small pieces and put in bowl with grapes.
  3. Plated coleslaw with a small amount of dressing.
  4. Add grapes and apple pieces to coleslaw.




Note: This fruit slaw is tasty and a good addition to your meals.

Vegetarian Stuffed Peppers

Ingredients

4 green peppers
1 medium yellow squash, chopped
1 medium zucchini, chopped
1/2 cup Portabella mushrooms, chopped
1/2 cup baby carrots, chopped
1/2 cup scallions, chopped
1 tomato on the vine, chopped
2 cups cooked whole wheat rice
2  garlic cloves, chopped
1/4 teaspoon fresh sweet basil, chopped
1/4 teaspoon dried oregano
1/4 teaspoon fresh parsley (curled), chopped
1 cup cannellini beans 
1 jar ( 26 ounce) tomato basil sauce

Directions

1. Prepare and cook beans.(Refer  to How to Prepare Cannellini Beans)
2. Cook rice and cool.
3. Wash all vegetables and put them aside.
4. Take off the tops of the peppers and take out the insides of the peppers.
5. Chop the other vegetables into small pieces.
6. Mix rice, vegetables and herbs together.
7. Put mixture in peppers.
8. Pour tomato basil sauce into 11"x 7" or large  baking pan.
9. Put pepper in pan.
10. Bake at 400 degrees Fahrenheit until peppers are tender approximately 60 minutes.

How to Prepare Cannellini Beans.

Ingredients 
cannellini beans
water

Steps
1. Soak for 12 hours overnight, and allow four cups of water to each cup of beans.
2. Drain the Cannellini beans after soaking.
3. Pour the drained beans into a cooking pot or saucepan with four cups of water.
4. Bring the water to a boil. Reduce the heat to low, cover the saucepan, and leave to simmer for about  1 1/2 hours or until soft.

Fall Fruit Salad with Fruit Sauce


Ingredients for Fruit Salad

Honey Crisp Apple - one
Gala Apple - one
Bosc Pear - one
Anjou Pear - one
Bartlett Pear - one
Navel Orange - one

Ingredients for Fruit Sauce

Honey - 1 cup 
Lemon juice - 1/4 cup
Cinnamon - 1 tsp
Nugget - 1/4 tsp
Walnuts - 1/4 cup, chopped
Pecans - 1/4 cup, chopped

Directions

1. Core apples, pears and peel orange
2. Cut apples, pears into small pieces and section orange
3. Put fruit in a large bowl
4. Drizzle some lemon juice on fruits to prevent browning.
5. Chop walnuts and pecans
6. In a small bowl, combine for fruit sauce (honey, lemon juice, cinnamon, nutmeg, walnuts and pecans).
7. Add fruit mixture to fruit sauce.

Personal Note :

I tasted this mixture and it is tasty and tangy.
