Rice Noodles Salad with Green Beans, Tomatoes and Red Wine Vinaigrette Dressing






 Salad Ingredients

7 ounces  rice noodles, medium width noodles or stir - fry noodles
1/2 pound fresh green beans, trimmed and cut into 2- inch pieces
2 cups cherry or grapes tomatoes, cut in half
1/2 cup chopped green onions
1/2 cup chopped thinly sliced basil

Dressing Ingredients

3 tablespoons red wine vinegar
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, minced

Directions

1. Bring 4 cups of water to boil in medium saucepan
    Remove from heat and add rice noodles then let it
    stand 8 to 10 minutes or until noddles are soft but 
    firm. Rinse under cold water, drain well, set aside
2. Combine tomatoes, basil and green onions in a
     small bowl
3.  Combine red vine vinegar, olive oil, lemon juice,Dijon 
      mustard, salt, pepper and garlic in a small bowl
4.   Put green beans in a steamer and steam them until
      they are soft but firm while maintain their color
5.   Add noodles to tomatoes, basil and green onions,
      add green beans and mix well
6.    Pour dressing over noodle mixture and toss gently
7.    Cover and chill at least one hour

Serving size: one cup
Serves 8
